I love creating cakes, and have done so for many years. My goal is to bring a touch of English class to the cakes I create on the Central Coast. Working out of a beautiful old home in the Avoca area, means I can deliver to you, a wonderful cake creation, for your special occasion, at a great price. I started my baking career at the age of 15 when I secured my first job, Saturday Boy at Country Style Bakery, in the rural village of Hartley Witney, Hampshire, England. This was a few years ago now! After the Country Style Bakery I was offered a full-time apprenticeship, which was completed at Jersey Bakery in Aldershot. During the 9 years working at Jersey, I also completed a three year course at Brooklands Technical College. While at college I developed a special interest in cake decorating and undertook an extra year in Advanced Sugar Work. In 1983, I won The Renshaw Cup for the best student. Renshaw s supply the Queens Garden Parties at Buckingham Palace with cakes and petit fours. After travelling abroad for six years, working in Fort Lauderdale and Cape Cod, Boston USA I followed my heart to Australia. Initially I worked as Pastry Chef and Cake Decorator at Le Bon Patisserie in North Ryde. Nowadays, I work from my own kitchen-with-soul, in a hillside cottage nestled amongst the trees of Copacabana, on the beautiful Central Coast of New South Wales. My formal qualifications are:- CERTIFICATE IN BAKERY City and Guilds of London Institute 1980 CERTIFICATE IN DESIGN AND DECORATION City and Guilds of London Institute 1981. David |
